I think language is inherently "digitized", but there were people who did things to emphasize it's digtal nature:

-Johann Gutenberg: took advantage of the digital & discrete nature of language to make the printing press far more efficient via movable type.

-Oulipo: used the digital/discrete/allographic nature of language to play word games & come up with constraints

Also, Matthew's Algorithm is a prime example of using the digital nature of language to manipulate it in new ways
